No Bake Lemon Cheesecake with Strawberries
Filling:
1 envelope unflavored gelatin
1/4 C. cold water
1 10 oz. package frozen strawberries in syrup thawed
In a small saucepan sprinkle 1 envelope of gelatin over the cold water. Place
over very low heat and stir 1 - 2 minutes until gelatin is dissolved. Remove
from heat and stir in strawberries. Mix well. Refrigerate for 10 - 15 minutes or
until mixture is the consistency of egg whites.
Cheesecake:
1 envelope unflavored gelatin
2/3 C. cold water
1/3 C. fresh lemon juice
12 oz. cream cheese softened
1/2 C. sugar
1/2 C. sour cream
1 t. grated lemon peel
1 purchased graham cracker pie crust
In a small saucepan sprinkle gelatin over the cold water. Let set 1 minute and
then over low heat stir 1 - 2 minutes, until gelatin is dissolved. Remove from
heat and stir in lemon juice.
In a large bowl, beat together cream cheese, sour cream, sugar and lemon peel.
Blend well. Stir in the gelatin mixture, mix well. Refrigerate for 1 hour or
until the consistency of egg whites.
To assemble cheesecake, pour half of the lemon filling in the crust. Pour
strawberry filling over the lemon. Top with the remaining lemon mixture. Pull a
knife thru all the layers of the pie to swirl the strawberry filling thru the
cream cheese mixture.
Refrigerate for 3 hours or overnight.
