Belgian Waffles with Cherry Sauce
2 cups flour
2 Tbsp sugar
1-1/2 tsp baking powder
1/2 tsp salt
2 cups milk
1/2 cup melted butter
4 eggs, separated
Cherry Sauce
1/4 cup sugar
2 tsp cornstarch
1/8 tsp ground cinnamon
1/2 cup orange juice
2 cups sweet cherries, pitted and halved
1 tsp grated orange peel
Sweetened whipped cream
1. Combine flour, sugar, baking powder and salt. In a separate bowl, combine
milk, butter, and egg yolks. Add to dry ingredients; stir just to moisten. Fold
in stiffly beaten egg whites. Bake in waffle iron according to manufacturer's
directions.
2. To make the cherry sauce: Combine sugar, cornstarch, and cinnamon; add orange
juice, cherries, and orange peel. Bring to a boil over medium-high heat; boil
until thickened.
3. Serve the warm cherry sauce over waffles; top with sweetened whipped cream.
Belgian waffles can be made ahead of time and frozen. Toast frozen waffles in
toaster oven or bake at 325 degrees for 12 to 15 minutes.
