Dublin Coddle
1 lb. good-quality pork sausages
1 lb. bacon
6 onions
8 to 10 potatoes
1/4 C. chopped fresh parsley
salt and pepper to taste
2 C. chicken stock
Preheat oven to 350°F. Warm sausages thoroughly in a heavy skillet, cooking on
medium high for about 3 minutes. Remove from skillet and cut sausages into
2-inch pieces. Place them in a large casserole. Fry bacon until crisp. Slice the
onions thickly and cube the potatoes.
Layer these on top of the sausages. Salt and pepper to taste. Sprinkle in the
parsley.
Cover it all with the 2 cups stock. Break up the bacon pieces and scatter on
top. Cover the casserole dish and bake at 350°F. for one hour.
Serve hot.
Serves 6 - 8.
