Eggs in Potato Nests

1 lb potatoes mashed
4 eggs
1 tbs. butter
1 egg beaten
light cream or milk

Spray ramekins with "Bakers Joy" (a no stick spray with flour added).
Mold mashed potatoes into a nest form in 4 ramekins.
Brush with beaten egg.
Put 1 egg into each nest.
Pour a little milk on each egg.
Put 1 piece of butter on each egg.

Adaptions
Add grated cheese, chopped chives, fresh oregano, cilantro or green onion and garlic to potatoes.
Pepper jack or cheddar on top of potato nest.
Add some chopped cheese to top of egg.
Cook at 400 degrees for 10 to 15 minutes until yolk is almost solid.
