You can also buy a loaf of banana nut bread if you don't have
the time to bake it. |

Banana Nut Bread French Toast
2 large bananas
2 C. flour
1 t. baking soda
1 t. baking powder
1 C. sugar
1/2 C. oil
2 eggs
1 oz. milk
1 t. vanilla
1 C. nuts (pecans, walnuts, etc)
Mash bananas in bowl, mix dry ingredients, except sugar, in another bowl.
Mix in sugar, oil, eggs, to bananas. Mix well, add vanilla and milk.
Add dry ingredients to wet ingredients, then add nuts.
Pour into a greased, floured loaf pan (4 x 8) Bake at 350° F. until a toothpick
comes out clean.
French Toast Batter
6 eggs
1 C. half and half
1/4 t. cinnamon
1 t. vanilla
pinch salt
Whisk above ingredients vigorously.
Slice banana bread 1/2" thick. Dip into French toast batter and carefully place
onto hot buttered griddle.
Cook 2-3 minutes until golden brown and turn over for another 1-2 minutes.
Serve garnished with fresh fruit or whipped cream and sprinkle with
confectioner’s sugar.
