Upside-down Caramel French Toast
1 loaf (1 pound) French bread
4 T. softened butter
1/2 C. packed brown sugar
1/4 C. corn syrup
1/2 C. chopped pecans (optional)
1 C. milk
1 egg
1/2 t. orange zest
1/2 t. cinnamon
1/2 t. vanilla
Preheat oven to 375° F.
Cut the bread into about 20 slices, discarding the heels; set aside.
Spread the butter in a 9-by-13-inch baking dish. Sprinkle brown sugar over
butter and then drizzle with corn syrup. Sprinkle with chopped pecans.
In a medium bowl mix together the milk, egg, orange zest, cinnamon and vanilla.
Coat each piece of bread in the milk mixture and arrange in the baking dish in
one layer. (Save any leftover slices for another use.) Bake for 35 minutes or
until bread is golden brown. Invert pan onto a platter and serve immediately.
