Make your own frozen waffles by cooling (but not stacking) baked waffles on a wire rack. When completely cool, store in airtight containers and freeze. Reheat them in a toaster, or in a conventional oven at 300°F. for 10 minutes. Do not use a microwave oven.

 

Gingerbread Waffles

3 eggs

1/4 C. sugar

1/2 C. molasses

1 C. buttermilk

1 1/2 C. flour

1 t. ground ginger

1/2 t. ground cinnamon

1/2 t. ground cloves

1/2 t. salt

1 t. baking soda

1 t. baking powder

6 T. butter, melted and cooled

Preheat waffle iron. In a small bowl, beat eggs until light and fluffy. Add sugar, molasses and buttermilk, and beat.

In a large bowl, sift together flour, ginger, cinnamon, cloves, salt, baking soda and baking powder. Add to batter and stir until smooth, then add butter and combine.

Pour 1/2 to 3/4 cup batter into very hot waffle iron and bake 4 to 5 minutes. Serve hot.

Makes 6 waffles.
