1/2 C. butter
2 C. brown sugar
1 C. whole pecans
1/2 C. water
Heat in saucepan until all sugar is dissolved. Cook for 5 minutes over medium
heat, after sugar has dissolved.
Peaches and Cream Stuffed Waffles with Praline Sauce
3 C. all purpose flour
1/4 t. baking soda
2 1/2 t. baking powder
4 T. melted butter
1/2 t. salt
2 C. buttermilk
2 t. orange extract
2 t. orange rind
Combine all ingredients. Mix until smooth. Pre-heat waffle iron. Spray with
cooking spray and make waffles.
12 oz. softened cream cheese
1/2 C. confectioners sugar
1 t. orange extract
Combine until smooth.
Peel 4 Peaches, slice and reserve for assembling waffles. Add 3 T. sugar to the
peaches. Let sit at room temperature while you make the waffles.
To Assemble: Spread approximately 3 Tablespoons of filling over waffle. Spread a
layer of peach slices over filling and fold waffle over. Top with praline sauce.
Garnish with a dollop of sour cream, peach slices and a sprig of fresh mint.
