Casserole Spinach Squares

2 10 oz pkg. frozen chopped spinach thawed and well drained
1 C Jiffy Mix or Bisquick
1/2 C Parmesan cheese grated
1 C shredded cheese
1/2 tsp seasoned salt
4 eggs beaten
1/2 C oil
1/2 C onion chopped
1 garlic clove minced
1 C shredded Monterey jack
1/2 tsp salt
1/2 tsp oregano

Grease a 9 x 13 pan. Heat oven to 350°.

Mix all ingredients in a large bowl and spread into prepared pan.

Bake about 25 minutes. Let cool slightly and cut into squares.

This is great as an appetizer and a side dish for breakfast.
