1 cup flour
1/2 cup wheat flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 egg whites
1 1/4 cups lowfat buttermilk
1 tablespoon margarine -- melted
1 teaspoon vanilla
3/4 cup raspberries, blackberries & blueberry
cinnamon, nutmeg or allspice
Coat waffle iron with nonstick cook spray and preheat. In large bowl, combine
the dry ingredients. In another bowl, whisk together egg, buttermilk, margarine,
and vanilla. Pour the egg white mix into well in flour. Stir til just blended.
Fold in half each of the berries. Spoon about 1 c. of batter onto hot waffle
iron. Close and cook til gold brown, 4-6 minutes. Repeat with rest of batter.
Should make 4 waffles. Top with equal amounts of rest of berries.
