This is my Aunt Bills' waffle recipe.
It is a great basic recipe. You can add blueberries, bananas, nuts or chopped
apple to it.
Waffles
2 C. buttermilk
2 eggs separated
1 t. baking soda
1 t. salt
2 C. flour
4 T. shortening or oil
Beat the egg whites until stiff and set aside. Heat the waffle iron.
Add the flour, salt and baking soda to a bowl and mix to combine. In a small
bowl beat the egg yolks with some of the buttermilk. Add the yolk mixture,
remaining buttermilk and oil to the flour and blend well. Fold in the egg whites
until just blended.
Spray with oil the grids on the waffle iron. Ladle or pour enough batter to
cover two-thirds of the grid. Close the waffle grill and cook until the steam
stops, about 5 minutes. When the waffle is done, lift the lid and remove the
waffle with a fork. Repeat with remaining batter.
