Keep
buttermilk powder on hand. The taste and texture remains nearly the same, and
the powdered stuff has a long shelf life if refrigerated in a tightly sealed
container. Or add 1 tablespoon vinegar to 1 cup milk.
Most waffle batters will remain fresh for a day or two if refrigerated in a
tightly sealed container.
Give the batter a stir before using.
If making a large batch of waffles, keep waffles warm by storing (in a single
layer, no stacking) on a wire rack in a 200-degree oven for no more than 20
minutes.
