Almond Whipped Cream
Whip 1/2 pint of heavy cream and add 1/3 cup confectioner's sugar and 1 teaspoon
almond extract and whip until well blended. Hold in refrigerator.
Fan out three pancakes on a plate, spoon over generous amount of apples, then
generous amount of whipped cream. Sprinkle with 1/2 teaspoon chopped walnuts.
Walnut Buttermilk Pancakes Topped With
Caramelized Apples and Almond Whipped Cream
Sift Together the Following:
1 C. flour
4 T. buttermilk powder
2 T. sugar
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
Add 1/2 C. finely chopped walnuts to the dry mix.
Mix the Following in a Separate Bowl:
1 C. water
1 T. walnut oil
Mix wet and dry pancake ingredients and cook on hot griddle - 1/4 cup per
3 green cooking apples, peeled and sliced
4 T. butter
1 1/4 C. brown sugar
1/4 t. nutmeg
1 t. lemon juice
1/2 t. vanilla
Saute the apples until golden brown. Add the brown sugar and nutmeg; stir until
it liquefies. Add the lemon juice and vanilla. Keep warm in an 140°F. oven.
