Glazed Apricot Pork Kabobs
Boneless Pork Loin, cut into 1" cubes
4 tablespoons Orange juice
1 10 oz. jar apricot preserves
1 tablespoon butter, melted
Stir ingredients well; place in heavy plastic bag. Marinate at least 30 minutes.
Thread pork onto 4-6 skewers (if using bamboo skewers, soak
in water for 30 minutes to prevent burning).
Grill over hot coals 10-12 minutes, turning occasionally.
Baste frequently with marinade.
