Apricot Chicken
1 3 - 3 1/2 lbs.
chicken
16 ounces apricot halves
1/2 cup chopped onion
2 cloves garlic - finely chopped
1/2 tablespoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
Grill
chicken as you normally would. During the last 5 minutes brush with apricot
glaze.
Serve sauce on the side.
To make the grilling sauce; puree apricot halves with their liquid in a blender
or food processor; reserve. Saute onion and garlic in oil until translucent.
Stir in reserved apricot puree.
Yields 2 1/2 cups.
