Marinades are used to enhance the
flavor of food. Foods are best marinated in glass, plastic or stainless steel
dishes. Make sure there is enough marinade to liberally cover the surface of the
food and still have a soaking liquid left.
Remember to occasionally turn the food.
Basic Beef Marinade
1/4 C. red wine vinegar
1/2 C. dry red wine
2 T. soy sauce
1 T. Worcestershire sauce
1 t. sugar
1/2 C. olive oil
2 cloves garlic minced
2 T. fresh chopped parsley
2 T. fresh herbs (basil, oregano, thyme, tarragon or rosemary)
1/2 t. fresh cracked black pepper
Combine vinegar, wine, soy sauce, Worcestershire sauce and garlic together.
Whisk in olive oil. Add herbs.
