Grilled Buffalo Chicken Sandwiches
1/4 cup crumbled blue cheese
1/4 cup sour cream
1/4 teaspoon celery seed
1 clove garlic - crushed
1/4 teaspoon Worcestershire sauce
4 boneless skinless chicken
breast halves
4 tablespoons purchased Buffalo wing sauce
4 kaiser rolls, split
Heat grill.
In small bowl, combine cheese, sour cream, celery seed,
garlic and Worcestershire sauce; blend well and then set aside.
To flatten each chicken breast half, place boned side up
between 2 pieces of plastic wrap or waxed paper. Working from center, pound
chicken with flat side of meat mallet or rolling pin until flattened slightly.
When ready to grill, brush each chicken breast half with 1
tbl. wing sauce. Place on gas grill over medium heat or on charcoal grill 4-6
inches from medium coals.
Cook 10-12 minutes or until chicken is fork tender and juices
run clear, turning once. During last 2 minutes of cooking time, place kaiser
rolls, cut side down, on grill; cook 1-2 minutes or until golden brown.
To serve, place grilled chicken on bottom halves of rolls.
Top each with blue cheese mixture. Cover with top halves of rolls.
