Chicken Tomato Skewers
1 1/2 lb. boneless skinless chicken breasts cut into 3/4 inch
cubes
3/4 c. buttermilk
1 tbsp red wine vinegar
5 garlic cloves minced
1 tbsp chopped fresh basil
1/4 tsp. black pepper
1 pint grape or cherry tomatoes
1 ed onion cut into medium cubes
Place chicken pieces in a
bowl. Add milk, vinegar, garlic, basil, and pepper. Cover w/ plastic wrap and
chill for 30 min.- 6 hours.
Heat grill racks, and brush with
oil.
Thread chicken , tomatoes, and onion on 8-10 inch skewers.
(If using wooden skewers make sure to soak in water first, to prevent burning).
Sprinkle w/ 1/4 tsp kosher salt, then grill covered 5- 10
min. , turning once, until chicken is cooked trough.
Serves 8.
