Compound butters are easy to use. Grill
your meats until the desired doneness and top off with a slice of butter. You
can even rub the meats while it's cooking with it the last few minutes. |

Green Chili Cheese Butter
8 T. butter
1 large long hot chili roasted peeled and chopped
4 T. fresh grated romano cheese
salt and freshly ground pepper
Mix all ingredients in a small bowl. Place butter on a piece of wax paper and
roll the butter into a log. Chill until ready to use.
