To toast the pecans, preheat the oven
to 375°F. Put the pecans on a shallow baking pan. Bake for about 8 minutes until
they are crisp and lightly browned.
This hearty butter can stand up to any steak. It is also good on baked potatoes.

Roquefort Toasted Pecan Butter
1/3 C. toasted pecans
2 1/2 oz. roquefort cheese crumbled
5 T. butter
dash hot pepper sauce
salt and freshly ground pepper
Add all the ingredients to a small bowl and mix well.
