Another Cabbage Salad
1 medium size head of green cabbage
1 small head red cabbage
2 cucumbers peeled
2 large carrots peeled
1/2 large sweet purple onion
1/2 large sweet white onion
Cut both cabbages into fine shreds. Dice the cucumbers. Shred the carrots. Dice
the onions fine.
Dressing:
8 T. oil
1/4 C. sugar
3/4 C. white wine vinegar
4 T. water
3 t. salt
Whisk the dressing ingredients together. Pour over the prepared vegetables.
Chill at least 2 hours before serving. Salt and fresh ground black pepper to
taste. |

Cole Slaw
1 head of cabbage
1/2 green pepper diced fine
2 carrots shredded
1 small onion diced fine
1 C. mayonnaise
1/4 C. sugar
2 T. cider vinegar
1/4 C. milk
Shred cabbage finely. Add carrots, green pepper and onion.
Mix together in a small bowl, the mayonnaise, sugar and vinegar. Stir in the
milk.
Pour dressing over cabbage and stir to coat. Let stand 1 hour if possible to
allow the flavors to mix.
