About Blue Cheese

American Maytag Blue is smooth and creamy with a peppery note.

Dolcelatte is a mild variety blue cheese. It is great for dessert or fruit.

English Stilton has a delicate taste and crumbles nicely and has a firm texture.

French Roquefort is made from sheep's milk, it is slightly tangy and salty. Use this one when you want something that is assertive.

Danish Saga is a soft and creamy blue and wonderful subtle tones.

Italian Gorgonzola is soft and creamy, with a pungent and earthy bite.

 

Steak Ala Blue

Steak's of your choice - filet, rib, porterhouse, t-bone

1/4 lb. crumbled blue cheese

1/3 lb. butter softened

1/2 lb. unflavored breadcrumbs

1 t. minced garlic

1 t. cracked black pepper

Mix blue cheese, butter, breadcrumbs, garlic and pepper together in a mixing bowl until well blended.

Roll into a fat (2 -3 inches around, depending on the steaks you choose) log between wax paper. Chill until ready to use.

Grill or broil steaks until desired doneness. Spread blue cheese mixture on top of steak and broil until lightly browned and cheese is melted.

Topping is enough for 4 steaks.
