Apple Praline Cheesecake
Apple Filling:
1/4 C. butter
1/2 C. light brown sugar
2 lbs. red delicious apples diced
1 T. cinnamon
1/2 t. allspice
1/2 t. nutmeg
Melt butter over low heat. Add the rest of the ingredients and cook over low
heat until the apples are soft, but still hold their shape. Cool apples to room
temperature.
Cheesecake Filling:
16 oz. cream cheese
1/2 C. sugar
3 eggs
1 C. heavy cream whipped
Mix cream cheese with sugar until light. Add in the eggs one at a time until
smooth. Add the cream and continue to beat until the mixture is thick and
creamy. Fold in the apple mixture by hand. Pour into prepared pan.
Top with Praline Topping. Bake at 350°F. for 1 hour and 20
minutes.
Cool at room temperature and refrigerate.
