Unsweetened chocolate is also known as bitter or baking chocolate. It is cocoa liquor which has been cooled and molded, usually into squares. It contains 50 to 58% cocoa butter.

Bittersweet is at least 35% cocoa liquor. It has varying amounts of sugar added along with butterfat and flavorings.

Semisweet can be used inter- changeably with bittersweet. It has more sugar and less chocolate flavor.

Unsweetened cocoa is a powder made from the chocolate liquor that has had nearly all of the butterfat removed.

Fudge Truffle Cheesecake

Crust:

1 1/4 C. chocolate wafer cookie crumbs

1/4 C. sugar

1/4 C. melted butter

Mix crust ingredients and pat into a 9 or 10 inch spring-form pan. Bake 10 minutes at 350°F.

Filling:

12 oz. melted semi-sweet chocolate

24 oz. cream cheese

1 can sweetened condensed milk

4 eggs

1 t. vanilla

Mix cream cheese and condensed milk together until smooth. Add eggs and beat until fluffy. Add chocolate and vanilla. Pour into crust.

Bake at 300°F. for 1 hour 5 minutes or until center is set. Cool and chill until ready to serve.
