Southern Sweet Potato Chicken
4 skinned chicken breast halves
2 tablespoons vegetable oil
1 cup evaporated milk
2 tablespoons honey
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 16 oz. can sweet potatoes in syrup, drained, reserve 1/4 cup syrup
1/4 cup raisins
Preheat your oven to 350 degrees.
In large skillet, place oil and heat to medium temperature. Add chicken , cook,
about 10 minutes or until lightly browned on both sides.
Drain chicken on paper towels and place in 13 X 9 X 2-inch baking dish.
In a small bowl, mix together evaporated milk, honey, salt, nutmeg and cloves.
Pour over chicken. Bake for 10 minutes.
Remove from oven and arrange sweet potatoes and raisins around chicken. Pour
reserved 1/4 cup syrup over chicken.
Return to oven and bake about 40 minutes or until fork can be inserted in
chicken with ease.
