Ready Prepared Chicken

When purchasing fully cooked rotisserie or fast food chicken, be sure it is hot at time of purchase.

Use it within two hours or cut it into several pieces and refrigerate in shallow, covered containers.

Eat within 3 to 4 days, either cold or reheated to 165 °F (hot and steaming).

It is safe to freeze ready-prepared chicken. For best quality, flavor and texture, use within 4 months.

 

Chipotle Chicken

2 C. chopped cooked chicken

2 T. slivered almonds

2 T. raisins

2 T. sliced black olives

1 15 oz. can tomato sauce

1 large clove garlic, minced

1 1/2 T. brown sugar, packed

1/4 C. vinegar

1 t. paprika

1 t. vegetable oil

1/2 t. salt

1/4 t. liquid smoke

1/8 t. crushed red pepper, or to taste

1 dozen corn tortillas

1 1/2 C. shredded cheddar cheese

In medium bowl, combine chicken, almonds, raisins and olives.

In another bowl blend tomato sauce, garlic, brown sugar, vinegar, paprika, oil, salt, liquid smoke and red pepper.

In a 1 1/2 quart greased casserole, alternate layers of tortillas, chicken, sauce and cheese, finishing with cheese. Bake at 375°F. for 30 to 35 minutes.

Makes 8 servings.
