No Fry Chicken Parmesan
4 boneless skinless chicken breast halves (about 1.25 lbs.)
1 egg, well beaten with 1 t. water
3/4 C. Italian seasoned dry bread crumbs
1 26-oz. jar favorite pasta sauce
4 oz. shredded mozzarella cheese
Heat oven to 400° F. Place chicken on clean cutting board. With meat pounder or
edge of saucer, flatten chicken slightly. Dip chicken in egg, then in bread
crumbs. Arrange chicken in 9 x 13-inch baking dish. Bake, uncovered, about 20 -
25 minutes.
Pour pasta sauce over chicken and top with cheese. Bake additional 15 minutes or
until chicken is no longer pink and juices run clean. Serve with hot cooked
pasta.
Makes 4 servings.
