Grand Marnier Chicken
1/2 T. vegetable shortening
1/2 C. oranges
1/2 C. Grand Marnier
1 1/2 C. sliced canned peaches
6 T. brown sugar
1 t. cinnamon
1 t. basil
1 clove garlic
1 frying chicken ( about 3 lbs. )
1/2 C. flour
1/4 t. salt
1/8 t. pepper
Dredge chicken in flour, salt, pepper and brown in a heavy skillet using
vegetable shortening.
In a saucepan combine oranges, Grand Marnier, peaches, sugar,
cinnamon, basil and garlic. Cook slowly for about 10 minutes.
Remove chicken from the skillet and pour off the chicken fat
and oil, retaining the brown bits in the bottom of the skillet. Put chicken back
in skillet and simmer until done.
Pour ingredients from saucepan over finished chicken.
