Three Cheese Chicken Bake
8 oz. lasagna noodles, cooked and drained
1/2 C. chopped onions
1/2 C. chopped green pepper
3 T. butter
1 t. basil
16 oz. cottage cheese
1 can cream of chicken soup
6 oz. can sliced mushrooms, drained
1/2 C. milk
3 C. cooked, diced, chicken
2 C. shredded American cheese
1/2 C. grated Parmesan cheese
Saute onion and green pepper in butter until tender. Stir in soup, mushrooms,
milk and basil. Heat through.
Arrange half the lasagna in 9 x 13 pan. Top with 1/2 each sauce, cottage,
American and Parmesan cheeses. Repeat with noodles, sauce, cottage cheese and
chicken.
Bake at 350ºF. for 60 minutes
Top with remaining American and Parmesan cheese and bake for 3 minutes longer or
until cheese on top melts.
Let stand 15 minutes before serving.
