Chocolate Zucchini Cake
2-1/2 c. flour
1/2 c. cocoa
2-1/2 t. baking powder
1-1/2 t. baking soda
1 t. cinnamon
1/2 t. salt
1/8 t. cloves or mace
3/4 c. butter or margarine
2 c. sugar
2 t. vanilla
2 t. grated orange or lemon peel (or 1 t. dried)
1/2 c. milk
2 c. shredded zucchini
1 c. chopped walnuts or pecans
2 c. powdered sugar
3 T. milk
1 t. vanilla
Preheat oven to 350° F.
Combine all dry ingredients together
Beat egg and add sugar. Add eggs one at a time; beat well.
Add dry ingredients alternating with milk.
Fold in zucchini, nuts and peel.
Pour into greased and floured tube pan or 9 x 13 cake pan.
Bake for 50 to 60 minutes until cake tests done.
Cool pan 15 minutes and turn out.
Drizzle glaze over cake when cooled.
