A easy way to make low fat chips is to
buy flour or corn tortillas. Cut them into dipping size wedges. Spray a cookie
sheet with cooking spray. Place wedges on the cookie sheet in a single layer.
Spray with a little more of the cooking spray. Bake at 350°F. for about 15 - 20
minutes or until crisp.
Black Bean Dip
2 (15 oz.) cans black beans drained and rinsed
1/2 C. vegetable or beef stock
1/4 C. chopped tomatoes fresh or canned
2 T. finely chopped onions
Place all ingredients in a pan and bring to a simmer. Cook, stirring
occasionally for 1 hour.
Strain mixture, reserving broth. Mash the beans with a potato masher . Add just
enough of the broth to achieve the desired dipping consistency. Serve with chips
and salsa.
Add spices if desired. Cumin, oregano, basil, or chili powder would be good
choices.
