I got this broccoli souffle recipe many
years ago from mother's best friend, Sydelle. She used to own a wonderful
cooking store and this was one of her "recipes of the month".
Broccoli Soufflé
1 lb. chopped frozen broccoli
1 lb. carton small curd cottage cheese
8 oz. cheddar cheese shredded
4 T. flour
1/3 C. melted butter
4 eggs
Mix first 5 ingredients. Whip eggs and blend them in. Bake at 350°F. for 1 hour
or until set.
Note: Sydelle says you can substitute spinach for the broccoli.
