Cheesy Crab Stuffed Potato
4 medium baking potatoes
1 C. sharp cheddar cheese
shredded
1/2 C. butter
1/2 C. half and half
1/4 C. diced onion
1/2 t. salt
1/4 t. red pepper
1 (6oz.) can crabmeat flaked
and drained
paprika
Scrub potatoes to clean. Bake
at 425°F for 45 - 60 minutes, until done. Allow potatoes
to cool until you can handle them.
Cut potatoes in half,
lengthwise. Scoop out potato, leaving 1/4 inch shell. Add the
scooped out potato to a bowl and mash with a masher. Add the
butter, half and half, onion salt and pepper. Mash again and
stir in crab. Spoon potato filling into the potato shells. Top
with paprika.
Bake at 425°F. for 15 - 20
minutes until potatoes are hot and cheese has melted.
Serves 4.
