Impressive in size and appearance, the
Portabella mushroom is a larger, hardier relative of the White and Crimini and
can range up to 6 inches in diameter.
Portabellas have a longer growing cycle than Whites and Criminis resulting in a
deep, meat-like texture and flavor.
Portabellas should hold 7-10 days. Keep refrigerated in paper bags. |

Portabella Stuffed with Potato
Bake 4 baking potatoes following the recipe for Stuffed
Potatoes. (omitting ham, in this section)
Fry 4 pieces bacon and set aside.
Have ready 6 large portabella mushrooms. Take the stems off. Instead of using
the potato shell, mound the potato mixture on the inside of the mushroom cap.
Top with Cheddar Cheese and fried crumpled bacon. Bake at 350°F. for 25 minutes.
