Potato Con Queso

3 medium size potatoes

1 Tbsp margarine

1 cup milk

dash of pepper

2/3 cup cubed cheese

1/4 tsp salt

1 Tbsp flour

Pare, dice and boil potatoes.

Cube cheese.

Melt margarine in saucepan and add flour, salt and pepper. Stir until well blended. Gradually add milk to flour and margarine mixture, stirring constantly.

Place potatoes in top of double boiler.

Cover with milk and margarine mixture.

Stir in cubed cheese and cook 12 minutes in top of double boiler over boiling water.
