Potatoes Ranchero
1/4 cup margarine
1/4 cup flour
2 cups milk
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup chopped green onions
1 8-oz. wedge sharp Cheddar cheese shredded
6 cups sliced cooked potatoes
1 green bell pepper cut in rings
1/2 cup barbecue sauce
Make cream sauce with margarine, flour, milk and seasonings. Add onions and
cheese. Stir until cheese is melted.
Alternate layers of potatoes and cheese sauce in 12x8 baking dish. Top with bell
pepper rings and barbecue sauce .
Bake 350° F. 25-30 minutes.
