What's the main difference between
brown and white rice?
Rice varieties may be identical, but brown rice becomes white rice in the
milling process.
Milling, often called "whitening," removes the outer bran layer of the rice
grain.
Milling strips off the bran layer, leaving a core comprised of mostly
carbohydrates. In this bran layer resides nutrients of vital importance in the
diet, making white rice a poor competitor in the nutrition game.
Fiber is dramatically lower in white rice. So are oils, most of the B vitamins,
and important minerals.
Savory Vegetable Rice Pilaf
2 1/2 C. water
1 1/3 C. brown rice
1/2 t. salt
2 T. olive oil
1 1/2 C. carrots julienned
1 1/2 C. onions julienned
1 1/2 C. celery thinly sliced
2 t. garlic minced
2 t. savory
2 t. basil
1 t. cumin
1/4 t. fresh black pepper
Bring water to a boil in a saucepan. Add the salt and rice. Cook, covered for
1/2 hour.
Heat the oil in a large skillet. Saute the carrots, onion, celery and garlic
together for about 4 minutes, add the spices. Stir into the rice at the end of
the rice's cooking time.
Pour into a casserole dish and bake at 350°F. for another 1/2 hour or until rice
is tender.
