Mediterranean Baked Fish With Zucchini Gratin and Green Salad

3/4 pound grouper filets
Salt and pepper
2 t. olive oil
2 T. pine nuts
6 pitted green olives
1/2 C. sweet pimiento
Zucchini Gratin
Green Salad

Heat oven to 400 degrees. Line baking sheet with aluminum foil. Rinse grouper and dry with paper towel. Sprinkle fish with salt and freshly ground pepper. Place on prepared baking sheet and drizzle oil on top. Bake 10 minutes. Spoon pine nuts, olives (cut in half) and pimiento (drained and sliced) over fish. Return to oven for 10 minutes. While fish bakes, make zucchini (recipe below). Then assemble salad (recipe below).

Makes 2 servings. Any type of mild white fish filet can be used in this recipe. Bake about 10 minutes per inch of thickness.

Zucchini Gratin
Makes 2 servings. Grate the zucchini in a food processor using a julienne cutting blade or use a grater with 1/4-inch holes.

1 lb. zucchini
2 T. Parmesan cheese
Salt and pepper
2 t. olive oil

Place grated zucchini (3 1/4 to 4 cups) in microwave-safe bowl. Microwave on high 2 minutes (or bring small saucepan of water to boil and add zucchini - drain as soon as water comes back to boil). Spoon half of zucchini into shallow ovenproof dish. Sprinkle 1 tablespoon grated Parmesan cheese; season with salt and freshly ground pepper. Cover with remaining zucchini and finish with Parmesan cheese and more salt and pepper. Drizzle olive oil on top. Place in same oven with fish for 5 minutes or until cheese melts.

Nutritional analysis (per serving): 129 calories, 8.4 grams total fat (2.8 grams saturated fat), 9 mg. cholesterol, 8.0 grams carbohydrates, 1.2 grams fiber, 219 mg. sodium, 9 grams protein


Green Salad
Makes 2 servings. Dressing may contain olive or canola oil.

4 C. washed, ready-to-eat lettuce
2 T. no-sugar-added oil and vinegar dressing

In large bowl, toss lettuce with dressing.

Nutritional analysis (per serving): 84 calories, 0.6 grams protein, 8.5 grams fat (1.3 grams saturated), 0 milligrams cholesterol, 1.9 grams carbohydrate, 0.3 grams fiber, 81 mg. sodium
