Try our crab breakfast pie recipe for a
brunch. Make them the night before. Add the breadcrumbs right before baking.
Crabmeat Breakfast Pie
1 bunch chopped scallions
1 large chopped red pepper
8 oz. crab meat
1 C. grated Swiss cheese
1 C. grated Cheddar cheese
8 large eggs
2 C. half and half
1 t. salt
1/2 t. pepper
1 C. bread crumbs
Butter 12 ramekins well.
In a large bowl mix together eggs, and half and half. Stir in scallions, red
pepper, and cheeses. Season with salt and pepper. Gently fold in crab. Don't
break it up too much.
Pour mixture into ramekins. Top with breadcrumbs. Bake at 350°F. for 30 minutes
or until set.
