Fish Tips

Fillets are harder to judge when looking for freshness, but one place to look is along the bone line. The color there should be red, not brown.

Fried Catfish

1 1/2 C. yellow cornmeal

1/4 C. all-purpose flour

3 t. salt

1 t. ground red pepper

1 t. garlic powder

1/2 t. black pepper

8 farm raised catfish fillets

vegetable oil, for deep frying

Mix cornmeal, flour, salt, red pepper, garlic powder and black pepper in a shallow bowl. Dredge catfish fillets in flour mixture, shaking off excess.

Fill a deep fryer, or large deep skillet half full with oil and heat to 375°F. Fry fish 3 to 4 minutes on each side or until golden brown. Drain on paper towels.

Serves 4 generously.
