Maine Lobster Cakes
6 slices white bread
3/4 C. butter, melted
3 separated eggs
3 C. cooked lobster in small chunks
1 T. finely grated onion, pulp and juice
1 t. Worcestershire sauce
1/4 t. dry mustard
As needed lemon wedges
Tear bread into small pieces, pour 1/2 cup of the butter over the bread, toss to
coat bread. Let stand about 20 minutes or until butter is absorbed.
Add egg yolks, lobster, onion, Worcestershire sauce and mustard; mix well.
Beat egg whites until stiff; fold into lobster mixture. Shape into 10 patties.
In a large skillet, melt remaining 1/4 cup butter. Add patties and cook gently
until golden brown on both sides.
Serve with lemon wedges.
