Lobster Scampi
Meat from 2 - 3
lobsters
1 cup white wine
8 oz. mushrooms, sliced
2 tbsp olive oil
1 medium Vidalia onion, sliced
2 tablespoon butter
1 lb. bow-tie pasta
2 tablespoon chopped parsley
3 garlic cloves, chopped fresh
ground Parmesan cheese
Heat olive oil and butter in skillet. Saute mushrooms, onion and garlic. Boil
pasta al dente. Drain and set aside. Add lobster meat to oil mix. Saute for 3
minutes. Toss well. Add wine. Remove from heat. Pour over hot pasta. Sprinkle
with chopped parsley, salt & pepper. Toss well. Top with fresh ground Parmesan
cheese. Serve immediately. Serves 4 - 6.
