than large sea scallops?" The reason for using different sizes
follows from the use to which they will be put. If your intended use calls for
quick heat on the outside, then slicing for presentation, small sea scallops are
hardly the answer. On the other hand, if you're making scallops and a creamy
sauce to be ladled unto small pastry squares, small is best. |
