Rhubarb Mincemeat
2 cups diced apples
4 cups chopped rhubarb
1 orange peel and juice
1 lemon peel and juice
2 cups brown sugar
1 cup raisins
1 cup currants
1/2 cup citron peel
1/2 cup apple juice or rum
1/2 tsp. salt
1/2 tsp. allspice
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. cinnamon
Combine all ingredients in a large pot. Simmer for 30 minutes. Bottle and seal
with wax until ready, for use in pies.
