June is Strawberry time here in
Michigan. I love to go out early in the morning and pick my berries.
Make your jam right away when you get home. Jam is so good when you have the
best berries you can find and tastes nothing like what you buy at the store.
Make extra jams and jellies and they make a wonderful homemade gift basket.

Strawberry Jam
2 qts. strawberries
1 package pectin
7 C. sugar
Wash and take the tops off the berries. Crush the berries, one layer at a time.
Measure 4 1/2 C. berries and put them in a pan. Add pectin and place over high
heat. Stir until mixture comes to a rolling boil. Add the sugar and return to
the boil. Boil hard 1 more minute, stirring constantly. Let set 5 minutes and
remove foam from top.
Ladle into hot sterilized jars. Process in a hot water bath for 10 minutes.
Yield: 4 pints
