Bittersweet chocolate is also called dark chocolate. It has a high percentage of cocoa solids in it, around 75%, with little or no added sugar. It has a rich, intense flavor.

 

 

 

 

President Bush's Favorite Brownies

1 1/4 C. flour

1/4 t. baking soda

1/4 t. salt

1/2 C. (1 stick) butter

2 C. semi-sweet chocolate chips (divided)

3 eggs

1 1/2 t. vanilla extract

1 C. sugar

Preheat oven to 350° F.

In bowl, combine flour, baking soda and salt.

In large saucepan, melt butter and 1 cup chocolate chips, stirring until smooth. (Or melt mixture in microwave for 1 minute at medium - 50% power. Stir and microwave in 10-second increments, if necessary. Do not overcook chocolate.) Add eggs and vanilla. Stir until well blended. Gently fold in flour mixture and sugar. Stir in remaining chocolate chips.

Spread into greased 11-by-9-inch pan. Bake in preheated oven 15 to 20 minutes or until wooden pick inserted into center comes out almost clean. Cool completely and cut into bars.

Makes 24 brownies.
