Scrumptious Coffee Cake
2/3 c. shortening (Crisco)
1 c. sugar
2 eggs
1/2 c. orange juice
1/2 tsp. vanilla
2 1/2 c. flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1 (21 oz.) can cherry pie filling
Topping: 1/2 c. sugar, 1/2 c. nuts; 2 tsp. cinnamon
Cream shortening and sugar. Add eggs, juice, and vanilla. Beat well. Add dry
ingredients to cream mixture. Put half of mixture in glass baking dish. Spread
pie filling over plus 1/2 topping nut mixture. Add rest of batter. Top with the
rest of the topping nut mixture. Bake at 325 degrees for 45 minutes in a 9 x 13
glass baking dish. |
