Winter Squash Apple Brunch
Cake
2 1/4 C. Flour
2 tsp. Baking Powder
1/2 tsp soda
1/2 tsp Cinnamon
1/4 tsp. nutmeg
1/2 C. butter
1 1/3 C. sugar
1/2 tsp. vanilla
3 eggs
3/4 C. cooked mashed squash (butter or acorn)
1/2 C. buttermilk
3-4 granny smith apples peeled and chopped (slice one cup and set aside)
1 C. raisins
1 C. Walnuts
1/4 C. sugar
Cream butter, add sugar spices and eggs. Beat until Fluffy. Stir the squash and
buttermilk together. Stir flour and baking powder and soda together. Add
alternatively with the squash mixture. Stir in chopped apples, raisins and
walnuts. Pour into greased and floured springform pan. Toss I cup remaining
apples with cinnamon and sugar. Arrange on top of the batter. Sprinkle raisins
on top. Bake at 350 for 1 to 1 1/4 hours. Cool. Drizzle with powdered sugar
icing. (Freezes well)
