Easy Peanut Butter Cookies
1 can
sweetened condensed milk -- (14 oz.)
3/4 cup peanut butter
2 cups Bisquick baking mix
1 teaspoon vanilla extract
Preheat oven to 375ºF.
In a large mixing bowl, beat the sweetened condensed milk and
peanut butter until smooth. Beat in the biscuit mix and vanilla extract; mix
well.
Shape dough into 1-inch balls; roll in sugar. Place balls 2
inches apart on ungreased baking sheets. Flatten cookies with a fork.
Bake for 6 to 8 minutes or until lightly browned. (Do not
overbake). Cool in pan. Store tightly covered at room temperature.
NOTES : For a nice variation called Peanut Blossoms, do not flatten the balls of
dough. Bake as above; remove from oven and press a milk chocolate candy kiss
into the center of each cookie.
