This is my Great Grandmother Beatty's
recipe. I use this dough at Christmas for rolled out cookies, it makes great
gingerbread men.
This is a typical "depression era" cookie. Notice the lack of shortening and
only 1 egg.

Molasses Cookies
1 C. sugar
1 egg
1 C. molasses
1 T. cinnamon
1 T. ginger
1 C. boiling water
1 T. soda
5 C. flour
Mix sugar, egg and molasses together. Add spices. Add soda to boiling water and
mix with sugar and molasses mixture. Add flour and blend well.
Chill at least 3 hours. Roll out on floured board rather thick (about 1/4 inch).
Cut with your favorite cookie cutter.
Bake at 400°F. about 9 minutes. Be careful not to overbake.
Cool and frost.
Frosting
2 C. confectioner's sugar
1 t. vanilla
Mix milk in a little at a time to desired consistency. If very thin, it is will
produce a glaze consistency.
